Basil Pesto – is a condiment or sauce that originated from Italy (Genoa in particular). Basil Pesto is traditionally a blend of fresh basil, crushed garlic, olive oil, pine nuts and parmesan cheese (Parmigiano Reggiano). Basil pesto is often used as a sauce for pasta, a condiment for soups, or on top of steamed vegetables such as greens beans or potatoes. Pestos can be made using a variety of herbs, cheese, nuts, and oils.
Chimichurri – is a condiment that originated from Argentina. Chimichurri is traditionally a blend of chopped parsley, minced garlic, olive oil, oregano and vinegar. A red version of Chimichurri may contain tomato and red pepper. Chimichurri is often used on top of meat or fish, but pairs up nicely with roasted vegetables.
Dukkah (Duqqa) – is a spice mix (often used as a condiment) that originated from Egypt. Dukkah is traditionally a blend of herbs, spices, and nuts (usually hazelnuts). It is served as a dip with oil and bread, and eaten as an appetizer. Dukkah is usually prepared with sesame seeds, coriander, cumin, salt and pepper. Mint is also a nice addition.
Hoisin Sauce – is a sauce that originated in China. Hoisin sauce often includes starches, water, sugar, soybeans, distilled vinegar, salt, garlic and red chili peppers. Many Chinese dishes use hoisin sauce. It’s also commonly used in Vietnamese cuisine.
Pistou – is a condiment that originated from France. Pistou is traditionally a blend of fresh basil, crushed garlic and olive oil. Pistou may or may not include cheese such as parmesan. Pistou is generally used as a garnish for soups.
Romesco Sauce [click for recipe] – is a condiment that originated from Spain. It’s a blend of ground nuts (normally almonds), red peppers, garlic, oil and chilies. Roasted tomatoes, red wine vinegar, onions and fresh herbs may also be added. Generally, Romesco Sauce is served with Seafood in Spain, but it can also double as a delicious sauce or condiment on grilled vegetables and legumes.
Sriracha Sauce – is a condiment that originated from Thailand. It’s a spicy blend chili peppers, distilled vinegar, sugar, garlic and salt. Srirache sauce is often used as a dipping sauce for seafood or spring rolls. It is also used as a condiment for Thai soups, noodles and to spice up vegetable dishes.
Sundried Tomato Pesto – is a variation of the Basil Pesto that includes sundried tomatoes.
Tzatziki – is a condiment that originated from Greece. Tzatziki is traditionally a blend of strained yogurt, cucumbers, garlic, salt and olive oil. Lemon juice, dill, mint or parsley may be added. Tzatziki is used as a sauce on items such as souvlaki + gyros. It is also used as a dip for crudités and pitas.
