Vegetarian Easter Menu Ideas

Hello! Hope you are all having a great weekend :) I am enjoying a four day weekend! And it’s been lovely so far. Yesterday, I met up with some friends and went for a long stroll at the Zoo. The weather was great – although, it’s supposed to snow tomorrow. *pouts*  Last night I went for one of two Easter dinners planned for this weekend. It was really nice. Yummy food and great company. And lots of chocolate! 

I had planned on posting a few Easter-related recipes this past week, but I ended up feeling really sick after my trip to Mexico. Perhaps leaving the sun, sand and surf caused my body to rebel in pure protest. *hah* Especially since it was quite chilly when I got home! 

Since I did not want to completely neglect Easter, I decided to put together a list of Easter menu ideas using some recipes from my favourite food blogs. 

I’ll be back tomorrow with a new recipe post. Now that I am feeling better, I am very excited to get back into the kitchen and start trying out some new recipes to share. Wishing you a lovely Easter!

Mayan Riviera & a lot of Guacamole

Hola! I just returned from a wonderful week of sunshine & lazy days spent at the beach. I spent the past week in the Mayan Riviera and shot a beautiful wedding mid-week. It was a fantastic experience. I met a lot of great people, spent time with some old friends, checked out Playa del Carmen and the Mayan Ruins in Tulum. I also spent a ton of time swimming in the ocean. The water was so warm and the waves so much fun. I really wish I lived closer to an ocean!
I am also proud to report that I think I succeeded in my goal of eating my weight in guacamole throughout the week. :) *hehe*

Looking so forward to getting back to blogging and offering up some delicious recipe posts this week. I’ll be sure to include some photos of my trip as well!

Link Love – Happy Friday! [Mexican Edition]

Hello, and happy Friday! Hope you all had a fantastic week :) My week was really nice – pretty relaxed for the most part. I finished up the last of my overtime shifts at work, spent time with Jesse, went for thai food with my friend Reyna, and met my friend Emily for lunch. The highlight of my week was hanging out with my dad last night. He and I drove 40 minutes out of the city to Half Moon for veggie burgers and fries. The weather was amazing yesterday – way above average temperatures again and not a cloud in the sky. We sat, had our dinner, chatted about life and then blared some Black Keys on the ride home. A fantastic evening. I love my dad to bits.

  So, I am pretty excited, as I start a week long vacation today! And in honour of this vacation, my Link Love inspiration this week has to do with my love of latin food. Why, do you ask? It’s because I am heading to the Mayan Riviera on Sunday! I’m heading there for a week and will be photographing a friend’s wedding. Looking so forward to it! I’ve not been on a relaxing vacation in an extremely long time and I’m looking forward to lounging pool side & eating my weight in guacamole. *hah* I’ve never been to Mexico before, so I am not entirely sure what to expect. But I’ve seen pictures of the beaches along the Mayan Riviera and they look stunning. I cannot wait to dip my toes into the ocean! I’m hoping to check out various sites while there including Playa del Carmen and Tulum. I will try my best to blog whilst there – as long as the internet connection is decent. And hopefully I’ll have some photos to post over the week too.

Speaking of travelling, two of my blog friends are off in Singapore this week enjoying what appears to be incredible food!
